Foody Friday Pasta dish

It's tomato time again in the garden and like every year we have some heirloom tomatoes too.

Here you can see a selection of them. Dark, old Mennonite tomatoes, white Coeur de boeuf, meaty pink old Belgian tomatoes and tiny marble size tomatoes.
So it is time to toss them is a friday leftovers pasta dish.

I brown some mince meat and spice it up with black pepper, salt, sweet paprika and then I add all kind of diced tomatoes. Ad a bit of tomato paste and let it stew for a few minutes. Then add a few torn fresh basil leaves.

Add some small pieces of zucchine and put the whole in a baking dish.
Top with some breadcrumbs and some grated parmezan cheese and bake until golden.

Serve with some garlic bread or some crackers or french baguette.

Enjoy!

I look all over for the delicious heritage tomatoes. I think I would eat them up before I ever got them into the sauce.

Nicky...that looks fabulous! Think I'll have to try making it. We've had a good show from our tomatoes. We've grown Brandywine, Phantom du Laos, Matt's Wild Cherry, Black Krim, German Johnson and a number of others. I just froze two quarts for later. Plan to do more.

Those hydrangeas in your last post are beautiful. I love hydrangeas. Our soil is so acid that mine are always blue. I'd like to try some of the Pinky Winkys and Limelights.

I just had to come and visit the blogger who left the comment about Americans using canned soups to make casseroles. I got such a kick out of it. We all grew up on Campbell's soup and they had recipes for everything. Chicken and Rice is the only thing I still make with them, I guess because it reminds me of my youth AND because it tastes so darn good. I hope you'll try it. I do make a wonderful artichoke-mushroom sauce from scratch that is always a big hit.

Your tomatoes are amazing. We have heirloom tomatoes here in Florida, but they are incredibly expensive. When I lived in California I could buy them from a local farmer for a very fair price and they were outstanding!

Your tomatoes look terrific - & thank you for the must try recipe! Our tomatoes have barely started but oh those raspberries...I kept looking at your berry photo at the top of your page for weeks hoping we would have a bowl like that. Now the canes are producing like never before. Don't you love summer gardens...
